Tahini and Grape Molasses Chicken
INGREDIENTS
2 chicken breasts
2 Turkish tea glasses of Beşe tahini
3 tablespoons Beşe grape molasses
1½ cups sesame seeds
2 cloves of garlic
Olive oil
Salt
Black pepper
(You can increase the ingredient quantities depending on the number of servings.)
INSTRUCTIONS
Peel the garlic cloves and crush them in a mortar until they form a smooth paste. Transfer the garlic to a large bowl, then add the tahini and grape molasses. Season with salt and black pepper and mix well until fully combined. Set this sauce aside.
Meanwhile, cut the chicken breasts in half widthwise, then slice them evenly into strips. Spread the sesame seeds onto a tray and place the prepared tahini sauce next to it.
Dip each piece of chicken first into the tahini–molasses sauce, then coat it with sesame seeds. Repeat this process for all the chicken pieces. Arrange them on a tray, cover with plastic wrap, and place in the refrigerator.
For extra flavor, allow the chicken to marinate for a few hours. This helps the meat absorb the sauce more thoroughly and results in a richer taste.
Once marinated, heat some olive oil in a frying pan over low heat. When the oil is hot, add the chicken pieces and fry them, turning occasionally, until cooked through and golden.
Since grape molasses burns easily, be sure to cook over low heat.
